Gastronomy

In the introduction we talked about something very famous in this town which is the “Glorias”. Glorias is a very famous candy around Mexico known by its sugar taste which its perfect after a meal with a lot of salsa or onion which is very common to eat here in Mexico, but one thing you maybe don’t know is that the Glorias were made for the first time in the north of Mexico to be specific in Linares, Nuevo Leon and here we going to tell you the story of this Mexican candy.

There’s not only one version for the story of this candy, the first version and the most known it’s that one time a lady by the name of Natalia Medina Núñez, began making these sweets at home for events, and they were so popular that people began to ask her to make "those sweets that taste like glory", and that is why they got that name. It’s interesting that legend of how the Glorias were made but there’s also another story that says something completely different and its that when the people in the town interview her, she said: “"My candies had no name, and one day I decided to register them. There they asked me for the name I should give them and, as I was not prepared, I thought of my granddaughter named Gloria, and that is how I registered them". And that’s the reason of its name, we won’t never know the true story but what we can be sure of is that is a proud invent of a Mexican lady here in our state. The ingredients and the original receipt it’s also a mysterious but we can know the base ingredients of it, the gloria is made by cow or goat milk, or a mixture of both, but it must be "raw" milk, "bronca" as we call in Mexico the milk obtained directly from the animal without any process for its preservation. sugar, walnuts, and baking soda. The original recipe is only available to those who still sell them under the name of "Marquetería La Guadalupana". So that’s the story of one of the most famous Mexican candies but Linares doesn’t have only that it also offers dry meat, fritada de cabrito al pastor and in sauce, carne asada cuts, tacos agachados, tortas compuestas, glorias, cajetas, marquetas, encanelados, besos de indios and natillas. You can taste these plates with the original flavor only here in Linares.
